New England Apple Bean Bake
This rather unusual mixture of ingredients and flavors bakes into a delicious bean casserole which is wonderful with baked ham. Also a good side dish for pork chops or a pork roast.
4 tablespoons butter or margarine
3 cups cubed tart cooking apples, (peeled)
1/2 cup chopped onion
1/2 cup Sugar Twin Brown
1/2 cup diced tomatoes
1 teaspoon cinnamon
1 teaspoon salt, (or to taste)
1 48-ounce jar Randall Great Northern Beans, drained
Melt the butter in a large skillet.
Add the apples and onions. Cook, stirring occasionally, for 10 minutes, or until the apples are tender.
Add brown sugar to skillet. Stir until dissolved.
Stir in the tomatoes, cinnamon and salt.
Place the Randall Great Northern Beans in a 2 quart casserole.
Pour the apple mixture over the beans and mix well.
Bake in a preheated 375° oven for 1 hour.

Baked Beans are a New England tradition. Original ingredients included maple syrup for sweetness and bear fat to keep the beans moist. The early colonists soon changed the ingredients to molasses and salt pork... the taste was superior plus it made the "bears" happier.
