Peanut Butter Chocolate Treats
1/2 cup Randall Great Northern Beans
2 tablespoons milk
1 pound plus 1 cup confectioners sugar
1/3 cup cocoa
1/2 teaspoon vanilla
1/8 teaspoon salt
1 cup smooth style peanut butter
In a food processor, or by hand, puree Randall Beans with milk until the consistency is smooth.
In a bowl, sift confectioners sugar and cocoa. Mix in pureed beans, vanilla, and salt. Mix until well combined.
Divide mixture into 2 equal parts.
On lightly buttered wax paper, spread 1/2 of mixture to even thickness in rectangular shape. Let sit for 5 minutes. Spread 1/2 cup of peanut butter evenly on top of each rectangle. Roll up like a jelly roll. A thin blade knife will ease mixture when first starting to roll into jelly roll shape. Roll so wax paper aids in rolling up candy and will cover mixture when completely rolled up. Place on cookie sheet or tray.
To serve, slice into 1/4 inch slices.
Makes about 1 1/2 pounds of candy.
