Armenian Couscous
For the Grain:
4 cups water
1 teaspoon salt
1 1/2 cups cracked wheat (bulgur)
2 tablespoons butter
1 tablespoon slivered hot pepper
For the Vegetables:
1 small winter squash, peeled and cut in large chunks (about 4 cups)
1/2 pound parsnips, peeled and cut in 1 inch chunks (about 2 cups)
3/4 pound cabbage, cut in chunks (about 3 cups)
12 ounces Randall Great Northern Beans, drained and rinsed
6 dried apricots or peach halves, halved
For Seasoning:
2 1/2 cups red pepper sauce
Bring water to a boil, add salt, and sprinkle in the bulgur. Simmer for 10 minutes. Line a vegetable steamer with cheesecloth and pour partially cooked grain through it to drain. Mix in the butter and hot pepper.
Arrange vegetables and dried fruit over grain in steamer, place over boiling water, and steam until vegetables are quite tender, about 30 minutes.
Serve red pepper sauce at table for individual seasoning.
Serves 4 to 5.
