Pinto Beans With Ham
A great side dish to serve with a medley of fresh garden vegetables and some hot cornbread muffins. Pass the hot pepper sauce for those who like it SPICY.
2 tablespoons vegetable or olive oil
1/2 cup chopped onion
2 large cloves garlic, minced
1/2 cup thinly sliced green onions
2 cups cubed ham
1 48-ounce jar Randall Pinto Beans, drained and rinsed
1/2 cup water or chicken broth
1 teaspoon sugar
1 teaspoon hot pepper sauce, (or to taste)
Heat the oil in a heavy skillet.
Add the onion and garlic and cook, stirring, for 5 minutes.
Stir in the green onions and ham and cook, stirring, for 5 minutes more.
Stir in the beans, broth, sugar and hot pepper sauce. Cook, stirring, for 8 to 10 minutes. (Add more broth if needed.)
Serve hot.
8 servings.
For an "old fashioned" ham flavor, use cured country ham in this recipe. A center cut steak is easily cut into cubes. To reduce the salt level, cover ham with hot water and soak for several hours. Drain and pat dry before cutting into cubes.
