Bean-Cheese Salad
12 ounces Randall Mixed Beans, drained and rinsed
2 stalks celery, chopped
1/4 cup chopped parsley
2 small or 1 large tomato, chopped
3 ounces brick, Jack, Muenster, or similar mild cheese, cubed (about 2/3 cup)
1/4 cup vinegar
1/4 cup oil
2 teaspoons honey
pepper
In a serving bowl, mix Randall Beans, celery, parsley, tomato, and cheese.
Beat together remaining ingredients until honey "melts." Pour over bean mixture.
Let marinate for 30 minutes or longer.
Serves 6.
