Marinated Bean Salad
1 24-ounce jar Randall Mixed Beans, drained and rinsed
1 large onion, sliced into 1/2 inch slivers
2/3 cup olive oil
2/3 cup sharp wine or cider vinegar
salt and lots of fresh ground black pepper
2 to 3 teaspoons sugar
chopped pimiento and green pepper (optional)
chopped fresh herbs, basil or mint (optional)
Pour the Randall Beans in a large mixing bowl.
Mix the rest of the ingredients to make the dressing, and pour it over the beans.
Toss until everything is thoroughly combined.
Cover the bowl and refrigerate overnight.
Serves 6 to 8.
