Bean-Cheese Bake
12 ounces Randall Mixed Beans, drained and rinsed
1/4 cup chopped sweet red pepper
1 medium onion, chopped
3 tablespoons catsup
3 tablespoons whole wheat flour
1 1/2 cups shredded cheddar cheese
1 1/2 cups milk
1/4 cup slivered almonds
1 tablespoon butter (optional)
Preheat oven to 350 degrees.
Combine Randall Beans, pepper, onion, catsup, and flour in a greased shallow 2 quart casserole. Add 1 cup cheese.
Pour milk over bean mixture, top with remaining cheese, and sprinkle with almonds. Dot with butter if desired.
Bake uncovered for 30 minutes until sauce is thickened and bubbling. As it cools, the sauce will thicken further.
Serves 4 to 6.
